Tasting

Annual release. Showcases the spiciness and evergreen notes of genepy with hints of lemon verbena, mace, honey, and wormwood. Rested in Sauternes barrels for added depth. Rich green color with a golden hue.

Process

750 mL · 50% ABV · Case of 6. Two-stage process: (1) Maceration & Distillation — begins with green herbs for color and bitterness, then adds 27 botanicals for complex flavor. (2) Blending & Aging — blended with New York honey and invert sugar, then aged for three months in Sauternes barrels in Greenport, NY. Botanicals: genepy, Sweet Annie, lemon balm, blessed thistle, feverfew, lemon verbena, red clover, NY honey, Citra and Centennial hops.
