Empirical Soka
0.75 oz
Simple syrup
0.75 oz
Fresh lime juice
6 leaves
Fresh mint
3
Lime quarters

Glass: Collins

Garnish: Lime slice + mint sprig

Build

  1. Lightly muddle mint with lime quarters in the base of a chilled collins glass — bruise, don't shred.
  2. Add simple syrup and Soka; stir to combine.
  3. Fill the glass with crushed ice.
  4. Swizzle for 5 seconds, top with more crushed ice, garnish with a lime slice and mint sprig.

Empirical Soka brings cut-grass and green-apple notes that pair surprisingly well with mint and lime. The drink reads as a mojito but tastes like a Cuban garden in spring.
