Build
- Lightly muddle mint with lime quarters in the base of a chilled collins glass — bruise, don't shred.
- Add simple syrup and Soka; stir to combine.
- Fill the glass with crushed ice.
- Swizzle for 5 seconds, top with more crushed ice, garnish with a lime slice and mint sprig.
Empirical Soka brings cut-grass and green-apple notes that pair surprisingly well with mint and lime. The drink reads as a mojito but tastes like a Cuban garden in spring.
