Process

750 mL · 40% ABV · Case of 12. Distilled in small batches in a Catskills barn, unfiltered, using local spring water to capture terroir's natural minerality. Botanicals — including maitake and shiitake mushrooms — selected for their contribution to a nuanced umami profile.
