APPEARANCE. Clear with subtle forest undertones.

NOSE. Earthy, savory aromas from maitake and shiitake mushrooms, complemented by floral chamomile and fresh green coriander.

PALATE. Rich umami, a hint of sweetness, and a soft pine finish, with a lingering warmth that enhances spirit-forward cocktails.

Process

750 mL · 40% ABV · Case of 12. Distilled in small batches in a Catskills barn, unfiltered, using local spring water to capture terroir's natural minerality. Botanicals — including maitake and shiitake mushrooms — selected for their contribution to a nuanced umami profile.
