APPEARANCE. Completely transparent, with a crystal-clear brightness that showcases the purity of its distillation and careful maceration of plum kernels and marigold.

NOSE. Rich marzipan aromas from the plum kernels blend harmoniously with delicate floral notes of marigold. Hints of bitter almond and subtle plum-skin tannins evoke a nostalgic, comforting scent — reminiscent of a freshly baked frangipane tart.

PALATE. Full-bodied and intricate, with marzipan-like sweetness from the plum kernels balanced by gentle almond bitterness. The marigold kombucha contributes floral, tea-like tannic notes — overall subtle sweetness without added sugar. The finish is smooth and lingering, with hints of nuttiness and floral tannins.

Process

750 mL · 32% ABV · Case of 6. Marzipan-like plum kernels and aromatic marigold petals are each macerated separately in Empirical's koji-based spirit before a second distillation. Distilled marigold kombucha adds refreshing floral and tannic notes that recall plum skins, balancing the final blend.
